Whether they’re rapidly seared Korean-style or simmered long and slow the French way, this down-home piece of meat has become a little less “comfort food” and a lot more “trendy meat appetizer that will impress my date showing him/her I don’t give a fuck about vegetarians.” Fun fact: in the UK they’re known as “Jacob’s Ladder”, but the only thing you’ll be climbing are the subway steps in Brooklyn trying to find the goddamn “urban New French bistro” that serves ‘em. Best served with a ten dollar glass of Pinot Noir to show you’re really living life on the wild side.
